Ingredients:

  • 1 lb lean ground beef
  • 1/2 lb ground pork
  • Green onions
  • Panko bread crumbs
  • Parsley (fresh or dried)
  • 2 eggs
  • Garlic powder
  • Salt & pepper

Steps:

  1. Preheat oven to 350°F.
  2. In a bowl, crack and beat the eggs.
  3. Finely chop green onions and add to the eggs.
  4. Season egg mixture with salt, pepper, parsley, and garlic powder.
  5. Add ground meat to the bowl and mix until everything is well combined.
  6. Add panko bread crumbs a little at a time until the mixture holds together but isn’t too dry.
  7. Form meat mixture into evenly sized balls.
  8. Lightly spray a cupcake pan and place each meatball into a slot.
  9. Bake for about 30 minutes, or until cooked through and slightly browned on top.
  10. Serve and enjoy.

Pairing Recommendations:

Serve over a bowl of pasta, either traditional spaghetti with red sauce or something more modern like the famous TikTok feta pasta. A good slice of garlic bread is always appreciated. A light salad to start makes the whole meal well-rounded.
